Cuchinta (Kutsinta)

1 cup rice, soaked overnight in 1 cup water
1 cup sugar
1 cup lijia

Grind soaked rice fine.  Add sugar and lijia.  Mix until well blended. Pour batter into small muffin pans or cups  and steam for 10-20 minutes.  Cool before serving.  This is best eaten with freshly grated coconut and a steaming cup of coffee.
