Easy Cocoa Brownie Recipe

I usually make brownies using melted chocolates, because really they’re the best in my opinion but last weekend, I needed to bake a brownie to give to my daughter’s teacher, I found out I ran out of chocolates so I searched for a brownie recipe using cocoa.  I have tried some recipes before but I am not satisfied with the result.  I have tried the brownie mix from the box (I like Betty Crocker’s) , they’re really good, and I figure if this stuff from the box can taste so good there must be a great recipe out there too like the one from the box; they used cocoa too plus chocolate chunks, right? So I searched and searched till I tumbled into this blog ( I don’t remember the blog’s title but I will post it here next time), I read through the entry, the ingredients are few and the procedure simple enough, so I just copied the ingredients down and just read the instructions, it was easy enough to remember.  This recipe is so easy to make and the outcome is so yummy! Below is the recipe (from memory) in my own words..

 1 1/2 sticks butter
1 1/2 cup sugar
2 eggs
3 tsp vanilla extract
3/4 cup all purpose flour
1/2 cup cocoa ( i used dutch process)
3/4 c toasted nuts, optional (use whatever kind you prefer or have on hand)
1/2 cup white chocolate morsels
1/2 cup semi-sweet chocolate morsels

Preheat oven to 360 degrees F.
In a small pan, melt the butter; turn off heat and add the sugar, stir well, set aside to cool. Butter a 9 inch square pan. If using nuts, this is the perfect time to toast it (I used pre-toasted cashew); put it in a baking sheet and in the oven for about 10 minutes. Let it cool for a bit before chopping into small pieces.

In a large mixing bowl, mix the eggs and vanilla extract; add the butter and sugar mixture in, then add the flour and cocoa, mix thoroughly for about 2 minutes till it becomes shiny. Stir in the nuts and chocolate morsels.

Bake in the preheated oven for about 25-28 minutes; don’t over bake! Take out of the oven and let stand for about ten minutes before cutting it into squares. Brownies are always better eaten the day after, so restrain yourself and keep yours in the fridge first, if you can resist that yummy chocolatey smell…
