Herb Steak

Whenever I cook steak for my family, I always opt for the simplest recipe..You know, just coat both sides with olive oil, then sprinkle salt and pepper over the meat and throw it in the preheated grill.  Open a bag of salad greens, toss it with mixture of olive oil and lemon juice and serve it alongside the grilled steak.. Voila! Dinner is ready.  But if you’re not feeling lazy or in a hurry on some nights (like I do) to prepare dinner for your family, why not  make that extra step to make it special; try the steak recipe below for a change, the herb rub will make the meat more flavorful..

1/4 cup olive oil
1/2 cup fresh parsley
1/4 cup fresh basil
1 tbsp fresh oregano
2 tsp cracked black pepper
1/2 tsp salt
2 beef top loin steaks, cut into 1 1/2 inch thick
2 medium bellpeppers, cut into rings, seeds removed
1 tbsp olive oil
Salt and pepper to taste

In a bowl, combine the 1/4 cup olive oil with parsley, basil, oregano, black pepper and 1/2 tsp salt. Trim fat from beef. Pat about 2/3 herb mixture on bot sides of steaks. Cover. Refrigerate for an hour.

Meanwhile, brush pepper rings with the 1 tbsp olive oil. Season with salt and pepper.

Grill steaks over charcoal or on stove top grill; allow 15-2o for medium-rare, and 18 to 23 for medium.. Grill the peppers with the steak until the peppers are tender. When done, remove the steaks from the grill and sprinkle with remaining herb mixture. Let stand covered fro ten minutes before slicing the meat to allow the juices to settle back in the meat. Cut into slices across the grain.

Serve with the grilled bellpepper rings on the side a glass of your favorite red wine.
