Ina Garten: Mango Banana Daiquiris

Last month I joined a group called Barefoot Bloggers, it’s a group of bloggers dedicated to following the steps of Barefoot Contessa (Ina Garten) by recreating her recipes, twice in a month.

I love Ina, I even call her my aunt Ina 🙂 (shhh..) Love her recipes, I tried many of them before I even started blogging; I was happy to find this group and I immediately emailed the group leader, Tara of my intention to join.

For the month of August the first recipe is Mango Banana Daiquiris. It was chosen by Veronica of Supermarket Serenade; the original recipe can be found in Back to Basics on page 47.

I have a very low tolerance of alcohol, I can drink dessert wine with 4% alcohol in it but only up to a glass beyond that I will have difficulty breathing and I’ll get red patches all over my body. My husband doesn’t drink anymore, he takes an occasional bottle of beer or two but that’s it and he doesn’t like cocktails, so when I found out that the first recipe for the month of August for barefoot bloggers was daiquiris, my reaction was uh-oh.

If I’m gonna do this, I can’t add the rum because no one in our house will drink it and it will be a waste of ingredients, on the other hand it will not be a daiquiri anymore without the rum or any alcohol in it. It is my very first recipe with the group and I really want to try it, allergy or not. We have alcoholic drinks at home that I use for baking and cooking so I can do this still.

I did the recipe accordingly without adding the rum first, I divided the mixture into 4 and added a fourth of the rum on one part. The one with the heart mango cut out (my creative side kicked in), that’s the real mango banana daiquiri the other glass with it was just a smoothie :0.

As expected no one drank the daiquiri, I took a sip just to taste as I have never had it before, just for experience. I have to say, I like the “smoothie” better, it may be just as well that I have allergic reaction to alcoholic drinks cause I don’t really like it anyway (except for wines). No offense to (aunt) Ina 😉

I don’t know what a highball glass is so I had to google it to find out and it turned out I didn’t have any of those glasses, I googled daiquiri and found out they are usually put into these glasses which fortunately I have.

Here’s the recipe

MANGO BANANA DAIQUIRIS
serves 4

Ingredients:

2 cups chopped ripe mango (1 to 2 mangos, peeled and seeded)
1 ripe banana, chopped
1/2 cup fresh squeezed lime juice (4 limes) (I used lemons)
1/4 cup sugar syrup*
1 1/4 cups dark rum, such as Mount Gay
Mango slices, for serving

Directions:

Place the mango, banana, lime juice, sugar syrup, and rum in a blender and process until smooth. Add 2 cups of ice and process again until smooth and thick. Serve ice-cold in highball glasses with the mango slices.
*To make simple syrup, heat 1 cup sugar and 1 cup water in a small saucepan until the sugar dissolves. Chill.

  • PLACE THE MANGO, BANANA, LIME JUICE, SUGAR SYRUP, AND RUM IN A BLENDER AND PROCESS UNTIL SMOOTH. ADD 2 CUPS OF ICE AND PROCESS AGAIN UNTIL SMOOTH AND THICK. SERVE ICE-COLD IN HIGHBALL GLASSES WITH THE MANGO SLICES.
  • *TO MAKE SIMPLE SYRUP, HEAT 1 CUP SUGAR AND 1 CUP WATER IN A SMALL SAUCEPAN UNTIL THE SUGAR DISSOLVES. CHILL.
