I’m back… I haven’t posted anything for almost a week, I had an order for birthday cupcakes and I’m getting ready for the pre-holidays fair/bazaar (coming later this month) that I signed-up for a couple of months back (what was I thinking?..now I’m super-tense and nervous).
I’ve been busy baking, testing recipes and eating them as well, I know it will show up on my face in the coming days ( my face gets fat first then my body follows LOL) if I don’t do something about it. I delivered the cupcakes yesterday ( I do hope the guests like it) and slept like a baby last night (a first in long while) and now I’m posting again, yay!
I was so busy and almost no time to cook but I’m glad for quick and easy recipes like this one I can get a meal ready even in the most hectic day. This recipe is inspired by Paula Deen from a video of her that I watched in youtube. I used extra-virgin olive oil instead of butter and I added some spice instead of just salt for the wings. I actually did this yesterday and it’s super-good.
RECIPE FOR HOT AND SPICY CHICKEN WINGS
500 g chicken wings, disjointed
salt and pepper
1/4 cup red hot chilli sauce
4 tablespoons extra virgin olive oil
2 teaspoons honey
cooking oil for deep frying
Heat oil in a deep pan for deep frying. Wash the chicken wings and dry with paper towels. Season with salt, pepper, cayenne pepper and granulated garlic. Deep fry in batches, careful not to crowd the pan and make sure you add the chicken wings one at a time in interval so as not to bring the temp of the oil down. Drain in paper towels.
In a separate pan, heat oil and add the hot sauce, stir, heat through, add honey and then add the cooked chicken wings, stir to coat the wings well. Transfer to a platter and serve. I garnish my chicken wings with scallions only because I have some scallions left in the fridge and it will look good in the photo but it’s not really necessary, you may use any greens/herb you want or is available for garnishing.
