I love using duck eggs for things although I’ve never used them for a Flan. They’re great in sponges but yes there is a different sort of smell to them! :)

I use whole eggs too with my leche flan and with evaporated milk. :)

How interesting to use duck eggs! This is the first time I’ve heard of it - I can imagine that it will make it much richer! Well done on your challenge.

Funny how you mention the extra egg whites because I always have some in the fridge I have forgotten to use. Ooh, and I’ve never tasted flan made with duck eggs before, might have to search for them here.
