Cinnamon Muffins

Cinnamon’s one of my favorite spices, I love it primarily for it’s heavenly scent; it makes the whole house smells heavenly when you bake with it; but I also like the fact that it’s very good for our health. I’ve read a lot of really good things cinnamon like it helps regulates our blood sugar and improve blood circulation among others. Yay for cinnamon lovers like me!

This muffin recipe is very simple; so quick and easy to make. I added more cinnamon than what the original recipe calls for and top half of it with slices of apple. Enjoy these with a cup of coffee or tea..life is good! :)

combine dry ingredients in a bowl..

wet ingredients in another bowl ( measuring cup).. mix well, then add to the dry ingredients..

put into paper-lined or greased muffin tin..top with apples if you like; bake..

 CINNAMON MUFFINS

Ingredients
1 1/2 cups flour
1/4 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup milk
1/2 cup packed brown sugar
2 teaspoons baking powder
1 egg, beaten
1/2 cup oil
1 small fuji or gala apple, peeled and sliced thinly ( optional)

Directions
Preheat oven to 350F.
Sift together flour, sugar, brown sugar, sugar, baking powder, salt, and cinnamon. Combine egg, oil, and milk, add to dry ingredients. Stir just enough to moisten. Fill greased muffin tins 2/3 full; arrange 2-3 apple slices on top if using. Bake for about 15-20 minutes.
