Summer Fresh Fruits Salad

One of the best thing about summer is the abundance of fresh fruits. We usually just wash, peel (if necessary) and eat fruits straight up like guavas, papayas, mangoes but sometimes there’s just too many different fruits at the same time and you need to eat them all at the same time and the perfect way to do that is to make a bowl of fruits salad with honey-calamansi dressing..my favorite summer snack..yum!

This is a very healthy and delicious, have as much as you like and use whatever fresh fruits in season that you have :) You can use it as topping for your favorite breakfast cereal, ice cream or frozen yogurt..yummy! :)

To make fresh fruit salad, I usually use:

papaya
mango
cantaloupe (melon)
kiwi
apple  or pear or both ( it adds crunch)
fresh mint ( optional, only when available)
calamansi juice ( or lemon)
honey
soy based all-purpose cream ( my new fave ingredient from Nestle), for topping, optional

Cut fruits in cubes, put in a big bowl, set aside. In another much smaller bowl, combine calamansi juice an honey, mix well and pour over the cut-up fruits, toss gently until well mixed. Chill for an hour in the freezer or at least 2 hours in the fridge before serving. Serve with soy cream on top if you like.
