Russian Tea Cakes

These cookies are so deliciously light and buttery, you may never want to stop eating them so make sure that you count the cookies that you put in your plate if you’re watching your diet 🙂

Russian Tea Cake, Mexican Wedding Cake, Polvorones – they’re basically the same: butter-nut cookies, just with different names and nuts used (Russian tea cakes though doesn’t have cinnamon powder, but I added some in the recipe).    

Just the other day, while I was browsing a recipe book, I found yet another similar recipe, Kourambiedes from Greece; the cookies are shaped into triangles or letter S, which reminds me of these crescent-shaped cookies from Morocco (I think) which has ground almonds in it. 

Whatever you call these cookies, whatever nuts you used, they’re just simply delicious..delicately soft , not too sweet and buttery, just perfect for tea or coffee too. Enjoy it with your loved ones! 🙂

It’s easy to make..( it can be done by hand too using wooden spoon)

cream butter, vanilla extract and confectioner’s sugar

add flour mixture and ground pecans (or walnuts)

..and shape into balls, flatten slightly ( I missed that part) and bake!

Roll slightly warm cookies in powdered sugar mixture ( I added some cinnamon powder).  Serve with tea ( or coffee).

RUSSIAN TEA CAKES
Makes 2 dozen delicious cookies

Ingredients

1/2 cup (or 1 stick) butter
1 teaspoon vanilla extract
4 tablespoons confectioners’ sugar
2 cups all-purpose flour
pinch of salt
1/3 cup chopped pecans or walnuts

1/4 cup confectioners’ sugar for coating/rolling+ 1/4 teaspoon cinnamon powder

note: Russian tea cakes  doesn’t have cinnamon powder, but I like cinnamon so I added som    

Here’s How:
Preheat oven to 350 degrees F.
In a medium bowl, cream butter, margarine and vanilla until smooth. Combine  4 tablespoons confectioners’ sugar and flour and mix well. Stir in the chopped walnuts. Roll dough into 1 inch balls and slightly flatten them and  place them 2 inches apart on a cookie sheet.

Bake for 11-12 minutes in the preheated oven. When cool, roll in confectioners sugar.
