Deviled Eggs
Recipe type: Appetizer
  • 4 eggs, hard-boiled
  • salt and cayenne pepper, to taste
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh cheese or soft cream cheese (optional, I added it because I don't want too much mayonnaise)
  • parsley flakes (optional)
  1. Peel and slice boiled eggs lengthwise. Scoop the yolks out and put it in a bowl.
  2. Mash the egg yolks and add salt, ground cayenne pepper, mayonnaise and fresh cheese, if using.
  3. Mix well. Add more mayo or cream cheese if the mixture is too thick, taste and adjust seasoning if necessary.
  4. Scoop the yolk mixture into a small ziplock bag, cut the tip and squeeze a mound into the egg whites. Sprinkle with parsley flakes and more cayenne pepper (optional).
  5. Enjoy!
