In a large bowl, combine mashed bananas, eggs, oil, coconut milk and vanilla, mix well. In a separate bowl, sift together flour, salt and baking powder; add dessicated coconut, mix to combine then add to the banana mixture, mix just until combine..DO NOT overmix or your muffins will get tough. Spoon into well-greased muffin pans or lined muffin pans. Bake for about 20-25 minutes; do not overbake, muffins should be soft inside and the top, crusty. I made about adozen and a half muffin with this batter using regular muffin pans.
