Shrimp and Chicken Yakisoba (Japanese Stir-fried Noodles)

This is really easy and fast. Healthy "fast-food" :) Adjust seasoning according to your taste. I don't really measure my seasoning, just start with small quantity then build-up from there if it is not to your liking.

TO MAKE SHRIMP BROTH:

  • In a bowl or using mortar and pestle, mash the shell and heads of shrimp.
  • Add hot water.
  • Let stand and strain when ready to use.

TO MAKE SEASONING:

  • Combine soy sauce, mirin and oyster sauce in a bowl, set aside.

TO MAKE YAKISOBA:

  • Sauté garlic, siling labuyo.
  • Add bite-sized chicken.
  • Add pechay and cook until wilted.
  • Add yakisoba noodles and shrimp broth and seasoning. Mix well.
  • Add the shelled shrimp.
  • Adjust seasoning to taste.
  • You're done. :)
