Boiled Pork (Nilagang Baboy)

One of  my favorite Classic Filipino dish from childhood up to now.

  • Wash pork thoroughly.
  • Put in a pot then fill the pot with water (¾ full).
  • Set to boil over high heat/fire.
  • Just before it boils, skim the scum that will float on top if there's any (this is important, you don't want your broth with floating with scum).
  • Lower heat to medium to bring pot to simmer.
  • Season with fish sauce and ground black pepper.
  • Simmer for an hour or more or until pork is tender.
  • Add the potatoes and saba banana.
  • Cook for about 10 minutes or until potatoes and saba are al dente.
  • Add the cabbage and dried parsley flakes and cook for about 5 minutes or to your desired doneness of veggies.
  • Taste and adjust seasoning to your liking.
  • Serve with rice. Enjoy!
