Mocha Sheet Cake

This cake is unbelievably easy and delicious- it’s moist and sweet and chocolate-y even though it only has cocoa and coffee in it.

FOR THE SHEET CAKE:

  • In a mixing bowl, combine flour, sugar, and salt.
  • In a saucepan, melt butter then add cocoa, stir until well blended.
  • Add hot coffee/ boiling water and coffee powder, bring to a boil for 30 seconds, then turn off heat.
  • Pour over flour mixture, and stir.
  • Combine evaporated milk and egg, baking soda, and vanilla.
  • Stir well and add mixture into butter/chocolate mixture.
  • Pour into sheet cake pan and bake at 350-degrees for 15-20 minutes.

FOR THE FROSTING:

  • Meanwhile, make the icing.
  • Melt butter in a saucepan, add cocoa, stir to combine, then turn off heat.
  • Add the milk, vanilla, and powdered sugar.
  • Stir until smooth then pour this over warm cake.
  • Top cake with some chopped pecans or any nuts of your choice.
  • Cut into squares, or just spoon some into a bowl and enjoy! 🙂
