Wash and put pork into a big pot.
Add bay leaves and peppercorns.
Bring to a boil and simmer until tender but not too tender.
Drain and slice pork into big slab and grill over charcoal or indoor grill is fine too.
Let the meat rest and cool before chopping into small pieces.
Combine chopped onions, chillies, soy sauce and calamansi juice in a bowl.
Add this marinade to the chopped pork and let stand for at least an hour.
After sometime marinating.....
Preheat a greased non-stick sizzling (cast-iron) plate over the stove.
Add some marinated pork and cook for just about a minute or two.
Turn off heat and crack an egg over the meat then stir and serve.
Squeeze some calamansi or lemon juice over just before serving..so yummy! Enjoy! :)
