Poqui-Poqui (Sauteed grilled eggplant with eggs)

As it turned out, Poqui-poqui (I like to say it with a rolling o sound so I won't feel embarrassed), is a dish from Ilocos region in the Philippines.

Ingredients
  

  • 4 Eggplant medium size / grilled with skin on
  • 2 cloves Garlic minced
  • 1 pc Red Onion large size / diced
  • 4 pcs Tomatoes medium size / diced
  • 4 pcs Eggs medium size / beaten and seasoned with some salt and pepper
  • Olive Oil extra virgin

Instructions
 

  • Grill eggplant on stovetop.
  • Let cool and gently peel charred skin, then chopped eggplant into small pieces.
  • In a pan, heat a tablespoon of olive oil, when oil is hot enough, add minced garlic, cook until lightly browned then add diced onion, then the tomatoes.
  • Cook until tomatoes are soft and mushy then add grilled eggplant, season with salt and pepper then pour in the beaten eggs.
  • Keep stirring and gently scrape bottom of pan to turn the mixture until eggs are cooked.
  • It's done! Transfer to a serving dish and serve with a smile. :)
