I usually cook or make dishes for my family without following any written recipes, most of what I know how to cook, I learned from watching my mother and some relatives and they don’t really have an exact measurement/ quantities of ingredients. So in the same manner, I would like to share some of delicious recipes that I love, you can tweak it or do your own thing with it and make it your own…and I hope that you and your family will enjoy it too..
Now I will share one of my fave, as I have mentioned, this is just my version of a popular recipe. ..Trifle cake
This is my easy-peasy trifle recipe. There is really no baking involved here, I just bought and assembled the ingredients and voila, I have a delicious treat for my family. It can be made ahead of time too, that’s why this is one of my favorite recipes to make. It is usually layered in a trifle bowl or individual glasses ( a goblet would be nice) but I made mine in a Pyrex glass bowl; just the right size for this recipe, you can use any vessel that would suit your fancy..
EASY STRAWBERRY TRIFLE CAKE
In making this strawberry trifle I have used apprximately:
Ingredients:
6 slices of pound cake (store-bought)
2 240ml jars of strawberry jam
2 250ml carton of all purpose cream
simple sugar syrup
rum, optional (not good for kids)
water
about 1/3 k of fresh strawberries or more, the more the yummier ( you may also use mango you’ll need about a kilo)
Directions:
Preparation: First, cut each pound cake slices into 8-9 slices; wash and slice strawberries (anyway you like it), reserve some for garnish. Dilute jam with a little water to make it spreadable. Prepare a simple syrup mixture, I always use 2:1 ratio; like 1/2 cup syrup mix with 1/4 rum (replace with water to make it kid-friendly). Whip the cream into stiff peaks use a hand/stand mixer or do it by hand, your arm will get a nice work-out :)..
To assemble: In a glass bowl, put a smear of whipped cream at the bottom, then put a layer of pound cake slices, drizzle or brush with syrup, spread some strawberry jam and a third of strawberries, cover with a layer of whipped cream; repeat the process until all your ingredients are used up. Arrange the reserved strawberries on top any way you like it..that’s it! Put the whole thing in the fridge until it is ready to serve. Yummy!
* to make a simple syrup, just combine an equal amount of sugar and water in a pot to boil for about 3 minutes. Turn off heat; cool and transfer into a jar, this will keep indefinitely in the fridge.
