These cookies are best eaten when warm so you can enjoy the warm peanut butter filing oozing from the center of the cookies. When the cookies cool, the filling sets but it is still soft and just as delicious.

Filling– combine peanut butter and powdered sugar in a bowl.
Scoop about a tablespoon of batter onto baking pan, flatten each and put peanut butter ball on top. Bring the edges of together to form a ball
Roll stuffed cookie dough ball in sugar
Bake for 12-15 minutes
Enjoy while they’re still warm. Look at that gooey center.. yum!
Peanut Butter Stuffed Cookies
These cookies are best eaten when warm so you can enjoy the warm peanut butter filing oozing from the center of the cookies. When the cookies cool, the filling sets but it is still soft and just as delicious.
Ingredients
FOR THE FILLING:
- 1 cup Creamy Peanut Butter
- 1/4 cup Powdered Sugar
FOR THE COOKIES:
- 1/2 cup Crunchy Peanut Butter
- 1/2 cup Butter softened
- 3/4 cup Brown Sugar
- 1 pc Egg large size
- 1 1/2 cup All-Purpose Flour
- 1/2 teaspoon Fine Sea Salt
Instructions
- Preheat oven to 375F degrees. prepare two baking sheets by lining with parchment paper.
FOR THE FILLING:
- In a medium bowl, combine peanut butter and powdered sugar; beat with a hand mixer on medium until the mixture is light and fluffy.
- Add egg and vanilla and mix until thoroughly combined, then add flour, baking soda and salt and mix until just combined.
FOR THE COOKIES:
- In a large bowl, combine peanut butter, butter, and sugars and beat with a hand mixer on medium until the mixture is light and fluffy.
- Add egg and vanilla and mix until thoroughly combined, then add flour, baking soda and salt and mix until just combined.
- Scoop a heaping tablespoon of the cookie dough and flatten into a pancake-like circle.
- Place the frozen peanut butter ball on top.
- Bring the edges of the dough around the peanut butter ball and pinch the edges together to seal, adding more dough if necessary to cover the frozen peanut butter completely.
- Roll stuffed cookie dough ball in sugar and place on baking sheet.
- Repeat until all dough is used, spacing the cookies about 2” apart.
- Bake until the cookies are golden on the bottom,12 to 15 minutes.
- Serve warm or at room temperature.
